  • 2 5-ounce StarKist Albacore Lemon and Cracked Pepper Tuna Fillets
  • 1 seedless cucumber, sliced
  • 1 small tomato, cut into wedges
  • 1/2 cup red onion, thinly sliced
  • 1 bell pepper, sliced
  • 1/2 cup pitted kalamata olives
  • 1/2 cup low-fat feta cheese
  • Chopped parsley, optional
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 tablespoon dried oregano
  • Sea salt and freshly ground
  • Black pepper, to taste

    How to make it

    Heat tuna according to package directions. Set aside. Toss all salad ingredients in large bowl. In small bowl, whisk together dressing ingredients.

    To serve, divide salad mixture among plates, top with tuna and drizzle with dressing. Garnish with extra olives or fresh chopped parsley, if desired. Serves 4-5.
