Birthday Fruit Box

Be sure to make this using the birthday boy or girl’s favorite fruit and ice cream.


  • 2 recipes 9-inch square Basic Butter Cake or Coconut Cake
  • 2 quarts favorite flavor ice cream
  • 1/4 cup jam or preserves (raspberry, strawberry, or apricot are good choices), stirred until liquid
  • 1 cup Apricot Glaze, warm
  • 1 pound strawberries, hulled and cut in half
  • 3-4 kiwifruit, peeled and thinly sliced
  • 1/2 cup blueberries and red currants, to decorate

    How to make it

    Leave the ice cream at room temperature for 10 minutes to soften. Wrap two pieces of cardboard with foil and place a cake on each. Slice the domed tops off the cakes. Cut around the inside of each cake leaving a 1/2-inch shell on the sides and bottom.

    Scoop out the insides of the cake. Fill the hollow centers of the cakes with the ice cream, packing it down firmly. Brush the cake with the jam and place one cake over the other, open-side down, to create a closed box. Press together firmly and wrap in plastic wrap or aluminum foil and freeze overnight.

    Still on the cardboard, place the cake on a serving plate. Brush with a layer of glaze. Working quickly, stick strawberry halves and slices of kiwi all over the surface of the cake. Brush the fruit with more fruit glaze. Decorate with the fruit. Serve immediately or return to the freezer.
