The traditional sweet potato casserole, filled with butter and sugar and topped with marshmallows, often accompanies Thanksgiving meals. You can enjoy sweet potatoes without all of the fat and sugar — this recipe does the job! The bit of brown sugar brings out the natural sugar in the sweet potatoes, and the hint of cayenne adds a memorable kick.

  • Nonstick baking spray
  • 2 pounds sweet potatoes, peeled or scrubbed, cut into thin wedges
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon packed dark brown sugar
  • 1/4 to 1/2 teaspoon cayenne pepper, depending on tast
  • Finely ground sea salt, for seasoning
  • Freshly ground pepper, for seasoning

      Preheat oven to 450° F.

      Spray baking spray on large baking sheet.

      Combine oil, sugar, cayenne pepper, salt, and pepper in small bowl.

      Place potato wedges in large bowl; pour oil mixture over potatoes and toss to coat.

      Spread potatoes in single layer on prepared baking sheet.

      Bake potatoes for 15 minutes; remove from oven and turn potatoes.

      Bake again until potatoes are tender and slightly caramelized, about 15 more minutes.

      Transfer potatoes to serving dish and season to taste with salt and pepper; serve immediately.
