  • 1 can (151/2 ounces) red kidney beans, drained
  • 1 can (10 ounces) enchilada sauce
  • 1 can (4 ounces) diced green chili peppers, undrained

  • 2 teaspoons chili powder
  • 1/2 cup shredded reduced-fat Cheddar cheese

Slowly add the cornmeal mixture to boiling water, stirring constantly to make sure it does not lump. Return to a boil, stirring constantly. Lower heat and cook for 10 to 15 minutes or until very thick, stirring occasionally.[/step-item]
