Reese’s Peanut Butter Cookies

Yields: 48 cookies

Ingredients:

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 bags mini peanut butter cups

Instructions:

  1. Cream together peanut butter, butter, and both sugars.
  2. Add egg and vanilla, then mix well
  3. In a separate bowl, combine flour, salt, baking soda and blend into creamed mixture
  4. Shape dough into 3/4 inch balls
  5. Place in mini cupcake tins lined with mini cupcake papers
  6. Bake at 350 degrees for approximately 8-10 minutes or until top of dough is slightly brown
  7. After removing cookies from oven, press a peanut butter cup into the center of each cookie so the dough comes up around the cup
  8. Let cool for 15 minutes before removing from tins
