Sailors’ Telescopes


  • 1 can (6 ounces) water-packed, chunk light tuna, chilled, rinsed, drained, and flaked
  • 4 ounces reduced-fat soft-style cream cheese, at room temperature
  • 1/3 cup finely chopped celery
  • 8 slices home-style white or whole-wheat bread

    How to make it

    In a medium-size bowl, stir together the tuna, cream cheese, and celery.

    Trim crusts from bread. Roll each slice lightly with a rolling pin until flattened.

    To make telescopes, spread about 2 tablespoons of the tuna mixture on each bread slice. Roll up. Serves 4.
