Mexican Tortilla Casserole
Katie says: “This is essentially lasagna, but with tortillas standing in for noodles. It’s one of those dishes that can miraculously be on the table in short order, made from things you most likely have in your pantry and fridge.”
Monday Night Brisket
Katie says: “This is called Monday Night Brisket because it’s the kind of dish you want to start when you have a stretch of time, like Sunday afternoon. Then you refrigerate overnight and dinner for Monday is basically prepped.”
Shrimp Stir-Fried Rice
Katie says: “This fried rice dish is lighter than take-out and has an appealing simplicity to it. Substitute diced chicken or pork for more variations.”
